I have found postfix <http://www.postfix.org> very flexible and easy to
set up. Their main site has links to all sorts of documentation and
howtos. It's kind of the apache of MTAs, however, meaning that it might
be overkill for the setup you're talking about. I know it would work
fine, though. =)
Other options are exim & qmail. Both look fairly friendly, and I know
they'd easily do what you want as well, but I have never actually put
either of them into production. They are both widely used.
But, please, by all that is good and holy, whatever you do, DON'T use
sendmail.
